Application:
The nitrite salt is used as a curing agent in the processing and production of meat and fish products. The use of the nitrite (curing) salt mixture, in contrast to the separate application of table salt and sodium nitrite has the following technological advantages:
- It helps preserve the pleasing naturally pink colour of meat and fish products;
- It helps achieve the characteristic pleasant flavour and colour;
- It facilitates the dosage during the technological treatment process;
- It reduces to a minimum the possibility of overall and local overdosing of the preservative;
- It inhibits the long-term growth of harmful bacteria in the products treated with curing salt;
- It is harmless when handled by the staff.
